Coconut Hot Cakes With Kauaiian Sausage

  All purpose flour 2 Cup (32 tbs), sifted
  Baking powder 4 Teaspoon
  Salt 1 Dash
  Beaten eggs 2
  Milk 2 Cup (32 tbs)
  Butter 1⁄4 Cup (4 tbs), melted
  Fresh coconut/Flaked coconut 1 Tablespoon
  Cooked smoked sausage links 10

Sift together dry ingredients.
Combine eggs, milk, and melted butter; add to dry ingredients, stirring just till flour is moistened.
Bake on hot griddle, turning only once.
Spread warm cakes with honey or coconut syrup; roll up each.
Place 3 cakes on a mound of flaked coconut for a serving; drizzle with melted butter.
Top with butter pats and sizzling sausage.
Offer guava jelly, papaya jam, poha jelly, and warm maple syrup.
