Chocolate Banana Pancakes
|Banana||1 Medium, peeled and mashed|
|Egg substitute||1⁄4 Cup (4 tbs)|
|All purpose flour||3 Tablespoon|
|Double acting baking powder||1 Teaspoon|
|Vanilla extract||1 Teaspoon|
1. In medium mixing bowl, whisk together all ingredients and 1/2 cup water.
2. Spray large nonstick skillet or griddle with nonstick cooking spray; heat over medium-high heat. Spoon batter into skillet by thirds, making 3 pancakes, each 4 inches in diameter. Reduce heat to medium and cook until bubbles appear on surface, about 2 minutes. Using spatula, turn pancakes over and cook until cooked through, about 2 minutes.
