Zucchini Pancakes

A Food Network Recipe by Paula Deen. Not as unhealthy as most of her other recipes ;)
Ingredients
  Zucchinis 2 , shredded
  Olive oil 1 Teaspoon
  All purpose flour 1⁄2 Cup (8 tbs)
  Olive oil 2 Tablespoon
  Onion 1 Small, chopped
  Mozzarella cheese 1⁄2 Cup (8 tbs), shredded
  Egg 1
  Black pepper powder 2 Pinch
  Salt To Taste
Directions

Shred the zucchini.

Combine all-purpose flour, egg and mozzarella cheese with the zucchini.

Add chopped onion, black pepper and salt and mix well.

Heat a shallow skillet and add some olive oil. Spoon a little (zucchini) mixture and shallow fry (in the shape of small discs) on the skillet on each side for 1-2 minutes.

Serve Hot with ketchup.

I use feta cheese in these Greek style (Kolokythia Krokettes) and a little mint. So good!
