Spiced Apple Pancakes

  Tart apples 4
  Butter/Margarine 7 Tablespoon, melted
  Sugar 2 Tablespoon
  Nutmeg 1⁄8 Teaspoon, ground
  Cinnamon 1⁄4 Teaspoon, ground
  Eggs 2
  Milk 1⁄2 Cup (8 tbs)
  All purpose flour 1⁄2 Cup (8 tbs), sifted
  Salt 1⁄4 Teaspoon

Peel and core apples.
Slice thin and saute in 1/3 cup butter for five minutes.
Mix 1/3 cup sugar and spices and add to apples.
Cover and cook for 10 minutes.
Mix eggs, milk, flour, and salt.
Beat with rotary beater for 2 minutes.
Heat 1 tablespoon butter, in 10-inch ovenproof skillet.
Pour batter into pan.
Bake in preheated very hot oven (450°F.) for 15 minutes.
As 'soon as batter puffs up in center, puncture with fork, repeating as often as necessary.
Lower heat to moderate (350°F.) and bake for 10 minutes.
Remove from oven; spoon 2 tablespoons melted butter over surface.
Sprinkle with 2 tablespoons sugar.
Spread apple mixture over half the surface; fold over.
Spoon 2 tablespoons melted butter over top; sprinkle with 2 tablespoons sugar

Great recipe! Very simple, and I just finished eating my half, and it was delicious! Instead of using actual apples, however, I used the pre-spiced, precut apples in a can from Food Lion...much easier to just throw 2/3 of the can in the microwave for a minute, and then put 'em on the cake. Yum Yum!!!
