Ricotta And Apple Pancakes
|Ricotta||1 Cup (16 tbs) (Polly-O)|
|Eggs||3 , lightly beaten|
|Butter||2 Tablespoon, melted (Polly-O)|
|Grated pared apple||1⁄4 Cup (4 tbs)|
|Grated orange rind||2 Tablespoon|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Sour cream/Polly-o ricotta/syrup/polly-o honey/jam||1⁄2 Cup (8 tbs)|
Combine ricotta with next 5 ingredients and mix thoroughly.
Gradually add just enough flour to make a thin batter.
Drop by tablespoonsful on well-greased hot griddle and brown on both sides.
Serve hot with a dab of sour cream or Polly-O Ricotta on each pancake, or with your favorite syrup, Polly-O Honey or jam.
