Turkey Potato Pancakes
|Peeled potatoes||3 Cup (48 tbs), shredded|
|Chopped cooked turkey||1⁄2 Cup (8 tbs)|
|Green onion with top||1⁄4 Cup (4 tbs), sliced|
|All purpose flour||2 Tablespoon|
|Salt||1 1⁄2 Teaspoon|
|Cooking oil||2 Cup (32 tbs)|
In a bowl, beat the eggs.
Add potatoes, turkey, onions, flour and salt; mix well.
Heat about 1/4 in.of oil in a large skillet.
Pour batter by 1/3 cup-fuls into hot oil.
Fry 5-6 minutes on each side or until potatoes are tender and pancakes are golden brown.
