Baked Cottage Cheese Pancakes

Ingredients
  Eggs 3
  Small cottage cheese curd 1 Cup (16 tbs), sieved
  Salad oil 2 Tablespoon
  Flour 1⁄4 Cup (4 tbs) (4 tablespoon)
  Salt 1⁄4 Teaspoon
Directions

Beat eggs until light and stir in cottage cheese and oil.
Sift flour and salt into the cheese mixture; mix thoroughly.
Spoon 4-inch circles of batter onto a lightly greased hot griddle.
Bake on both sides until golden brown.
You may make these pancakes the night before, fill them with applesauce, then reheat them in a 350° oven 15 minutes.
