Hot Mince Pancakes

  All purpose flour 1 1⁄4 Cup (20 tbs)
  Baking powder 2 Teaspoon
  Egg 1 , beaten
  Half and half/Light cream 1⁄2 Cup (8 tbs)
  Milk 1⁄4 Cup (4 tbs)
  Cooking oil 3 Tablespoon
  Mincemeat 1 Cup (16 tbs), prepared
  Orange sauce 1 Cup (16 tbs)

1 In a mixing bowl stir together flour and baking powder. In another mixing bowl combine egg, half-and-half, milk, and oil; stir into flour mixture just until combined. Gently fold in mincemeat.
2 Heat a lightly greased griddle or heavy skillet over medium heat until a few drops of water dance across the surface. For each pancake, pour about 1/4 cup of the batter onto the hot griddle. Cook over medium heat 1 to 2 minutes on each side or until pancakes are golden brown, turning to cook second sides when pancakes have bubbly surfaces and slightly dry edges.
