|Pancake mix||1 1⁄4 Cup (20 tbs)|
|Milk||1 1⁄2 Cup (24 tbs)|
|Melted butter||1 Tablespoon|
|Gouda cheese slices/Edam cheese slices||8|
|Walnuts||1 Cup (16 tbs), chopped|
Place the pancake mix and salt in a mixing bowl.
Beat the eggs with the milk and stir in the butter.
Add the liquid ingredients to the pancake mix and stir just until the mixture is well combined.
Heat an oiled crepe pan or other small frying pan until very hot.
Make very thin pancakes and stack on a clean tea towel as they are done.
You will need 12 pancakes.
The remaining pancakes may be wrapped in foil and frozen for future use.
Place 4 pancakes on a buttered cookie sheet.
Place a slice of cheese on top of each.
Place another pancake, then a slice of cheese on top of each stack and end with a pancake.
Place the cookie sheet in a preheated 275° oven for 15 minutes.
Place each stack of pancakes on an individual serving dish and sprinkle the walnuts on top.
