Gluten-Free Potato Pancakes

My family members who are very choosy about vegetables, finally had potatoes going down their mouths thanks to this Potato pancake recipe. This Potato Pancake recipe I have furnished here, has something unique about it. So, check it out!
Ingredients
  Potato flakes 480 Milliliter (2 Cups)
  Gluten free pancake mix 60 Milliliter (1/4 Cup)
  Water 590 Milliliter (2 1/2 Cups)
  Egg 1 , beaten
  Onion 1 Small, diced
  Onion powder/Garlic powder / lemon pepper 1⁄2 Teaspoon (3 Milliliter)
Directions

Mix first 2 ingredients.
Stir in water and onion.
Stir in egg.
For spicier cakes add to dry mixture onion or garlic powder or lemon pepper.
Salt and pepper to taste.
Let stand 1-2 minutes.
Bake on well oiled, preheated griddle until golden brown.
Turn once.
