Cornmeal Mountain Buttermilk Pancakes

Ingredients
  Egg 1
  Buttermilk/Regular milk plus 4 teaspoons vinegar 1 1⁄4 Cup (20 tbs)
  Molasses 1 Tablespoon
  Melted shortening 1⁄4 Cup (4 tbs)
  Regular all purpose flour 1 Cup (16 tbs), unsifted
  Salt 1 Teaspoon
  Soda 1⁄2 Teaspoon
  Baking powder 2 Teaspoon
  Yellow cornmeal 1⁄2 Cup (8 tbs)
Directions

Beat together the egg, milk, molasses, and shortening.
Add the flour, sifted with the salt, soda, and baking powder; add cornmeal, stir just to blend.
Bake on a moderately hot greased griddle.
