Cornmeal Mountain Buttermilk Pancakes
|Buttermilk/Regular milk plus 4 teaspoons vinegar||1 1⁄4 Cup (20 tbs)|
|Melted shortening||1⁄4 Cup (4 tbs)|
|Regular all purpose flour||1 Cup (16 tbs), unsifted|
|Baking powder||2 Teaspoon|
|Yellow cornmeal||1⁄2 Cup (8 tbs)|
Beat together the egg, milk, molasses, and shortening.
Add the flour, sifted with the salt, soda, and baking powder; add cornmeal, stir just to blend.
Bake on a moderately hot greased griddle.
