Potato Onion Pancakes
|Evaporated milk||1⁄2 Cup (8 tbs)|
|Fine dry bread crumbs||1⁄2 Cup (8 tbs)|
|Egg||1 , beaten|
|Minced onion||1 Teaspoon, minced|
|Grated raw potatoes||2 Cup (32 tbs)|
|Salt||1 1⁄2 Teaspoon|
|Bacon drippings/Cooking oil||4 Tablespoon|
Pour milk over bread crumbs; allow to soak until milk is absorbed.
Stir in egg, onion, potatoes, and salt.
Heat bacon drippings on griddle or in frying pan; drop batter from a tablespoon onto griddle and press out rather thin.
Cook slowly until well browned.
