|Frozen spinach||2 Cup (32 tbs), creamed|
|Onion||1 Large, grated|
|Peanut oil||1⁄4 Cup (4 tbs) (use Planters, for shallow frying)|
Cover the bottom of a frypan with enough oil to spread evenly.
Defrost the spinach and add the grated onions in a mixing bowl.
Once the onion and creamed spinach is mixed very well, add 1 to 2 tbsp. flour, enough to hold the pancake together.
Add the two eggs and beat into mixture.
Drop 1 tbsp. of the mixture into the hot fat and fry on both sides until golden.
