This pillow soft pancakes are made with buttermilk and whisked egg whites and are light and airy. Together with flour, sugar, baking powder and vanilla essence, these pancakes are a great staple recipe to bookmark. Perfect for a Sunday lazy day breakfast or Pancake or Shrove Tuesday. Adapted from an original Donna Hay recipe from her magazine.
Egg white | 3 | |
All purpose flour | 2 1/2 Cup (40 tbs) , sifted | |
Buttermilk | 3 Cup (48 tbs) | |
Sugar | 3 Teaspoon | |
Baking powder | 3 Teaspoon | |
Vanilla extract | 1 Teaspoon |
MAKING
1. Beat egg whites with a whisk attachment until peaks form.
2. In a separate bowl, take flour, buttermilk and mix that in with a paddle attachment.
3. Drop in sugar and baking powder and beat that in until a light and fluffy batter is formed. Drop in vanilla extract and mix well.
4. Gently fold in the egg whites.
5. Heat oil in a pan. Drop in a spoonfull of batter on the pan. Wait for a while, flip it when bubbles start to appear on top, cook on both sides.
6. To prepare chocolate pan cakes, drop in chocolate chips when bubbles start to appear and then flip it.
SERVING
7. Serve the pancakes with honey or maple syrup. Enjoy.
