Sweet Potato Pancakes - Healthy Breakfast

Sweet potatoes are packed with nutrition and make these pancakes super moist and fluffy!

Ingredients

White whole wheat flour 1 Cup (16 tbs)
Baking powder 2 Teaspoon
Ground cinnamon 1/2 Teaspoon
Ground nutmeg 1/4 Teaspoon
Salt 1/2 Teaspoon
Egg 1 Large
Milk 1 1/4 Cup (20 tbs)
Brown sugar 1 Tablespoon
Vegetable oil 1 Tablespoon
Sweet potato puree 1 Cup (16 tbs)

Directions

In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.

In a separate bowl, whisk together egg, milk, brown sugar, vegetable oil and sweet potato puree.

Gradually add in the flour mixture to the wet ingredients and stir until just combined.

Heat a large griddle over medium heat and lightly coat with butter. Pour about 1 tablespoon of the pancake mixture onto the griddle, making as many pancakes as will fit and cook for 2 minutes. Flip the pancakes and cook for one minute longer.

 

SERVING

Drizzle maple syrup or honey and serve.
