|Smoked oysters||3 2⁄3 Ounce|
|Hot pepper sauce||To Taste|
Rinse tomatoes, remove stems.
Drain on paper towels.
Slice each tomato vertically to within 1/4-inch of the base.
Spread tomato apart slightly, slip in oyster.
Season each filled tomato with 1 to 2 drops hot pepper sauce.
Refrigerate, covered, until ready to serve.
If desired, garnish each tomato with a parsley sprig before serving.
