Corn Oysters

Ingredients
  Eggs 2
  Cooked corn kernels/Fresh corn cut from the cob 2 Cup (32 tbs)
  Flour 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Freshly ground pepper 1⁄4 Teaspoon
  Grated nutmeg 1⁄2 Teaspoon (A Few Gratings)
Directions

Separate eggs.
Beat whites until stiff, but not dry.
Combine the corn, yolks, flour, and seasonings.
Fold in the whites.
Drop by teaspoonfuls onto a hot buttered frying pan.
Brown and turn once.
