Grilled Oysters with Sweet Peppers and Chive Butter

  Oysters 12 Large, shucked
  Lime juice 1 Tablespoon
  Black pepper To Taste
  Red bell pepper 1 , seeded and cut into 3/4-inch triangles
  Yellow bell pepper 1 , seeded and cut into 3/4-inch triangles
  Olive oil 2 Tablespoon
  Shallot 1 Tablespoon, chopped
  Olive oil 1 Tablespoon
  Dry white wine 3⁄4 Cup (12 tbs)
  Fish stock 3⁄4 Cup (12 tbs)
  Butter 3 Tablespoon
  Snipped chives 2 Tablespoon
  Chive 1 Teaspoon

1. Begin by preparing oysters; take a bowl and mix together the oysters, black pepper and lime juice ; let them stand in the refrigerator for some time
2. In another bowl, mix the bell peppers, oil, and some more of the black pepper and let it stand for a few hours
3. For the Chive Butter, in a small skillet, add oil and sauté the shallots over a medium flame; add wine and fish stock and let the liquid reduce a bit
4. Now, whisk the butter into it, one tablespoon at a time, and turn the heat off so that the sauce doesn’t separate; add chives and pepper and keep warm
5. Place the oysters on a hot, evenly greased grill and cook for a minute, turning thereafter
6. Add in the bell peppers now and allow to cool for another minute
7. Take off the grill and palce them on paper towels or absorbent tissue to get rid of excess oil

8. On each of the serving plates, pile on some chive butter; place three of the oysters and this pool and place the red and yellow bell peppers alternately
9. Garnish with chive blossoms and serve
