|Grated parmesan cheese||1 Tablespoon|
|For mornay sauce|
|Plain flour||1 Tablespoon|
|Grated gruyere cheese||60 Milliliter|
Choose large flat oysters.
Sprinkle with salt and pepper and place under a hot grill for 1 minute.
Spread each oyster with mornay sauce to cover.
Sprinkle with parmesan cheese and bake in a hot oven for 5-10 minutes or until golden brown.
Mornay Sauce: Melt butter in a small saucepan.
Blend in flour until smooth, cook 1-2 minutes.
Add milk and bring to the boil, stirring continuously.
Remove pan from heat and add cheese, stir until cheese melts.
Add salt and pepper to taste and enough cream to make a good coating consistency.
