Broiled Oysters With Watercress

Ingredients
  Watercress 1 Bunch (100 gm), stalks trimmed off and leaves finely chopped
  Cream 65 Milliliter (1/4 Cup)
  Lemon juice 1 Teaspoon
  Cayenne pepper 1 Pinch
  Salt To Taste
  Grated parmesan cheese 2 Tablespoon
  Oysters 12 , cleaned and top shells removed
  Dried white bread crumbs 2 Tablespoon
Directions

Preheat the broiler to moderate.
Put the watercress, cream, lemon juice, cayenne pepper and salt in a small saucepan and cook over low heat until the watercress is cooked.
Rub the mixture through a fine sieve into a small bowl and stir in the cheese.
Lay the oysters on a broiler pan.
Spoon the sauce equally over each oyster and sprinkle with the bread crumbs.
Place the pan under the broiler for 5 minutes or until the top is golden and bubbling.
Serve hot.
