Olympia Oyster Hangtown Fry

Ingredients
  Medium oysters 1⁄3 Cup (5.33 tbs) (1/3 cup, fresh)
  Slightly beaten eggs 2
  Water 1 Tablespoon
  Dry bread crumbs 1⁄2 Cup (8 tbs)
  Bacon slices 2
Directions

Dip oysters in mixture of egg and water; roll in dry bread crumbs.
Fry bacon in 6-inch skillet till crisp; remove bacon and all but about 1 tablespoon of fat.
Add oysters and brown quickly, turning often.
Add bacon; pour in remaining egg mixture; season with salt and pepper.
Cook till slightly brown and just set.
Turn and brown.
