Mock Oysters

Ingredients
  Salsify 2 Cup (32 tbs), mashed cooked
  Egg 1 , well-beaten
  Pepper 1⁄8 Teaspoon
  Salt 1⁄2 Teaspoon
  Paprika 1 Dash
  Melted butter/Margarine 1 Tablespoon
  Dried bread crumbs 1 Cup (16 tbs)
Directions

Combine all ingredients except bread crumbs and shape into 12 oyster-size patties.
Roll in crumbs and saute in a little hot fat in a skillet until golden brown on both sides.
Serve as a vegetable.
