Oysters with Pink Butter
|Oysters in the shell||12|
|Shallots||1 Tablespoon, minced|
|Unsalted butter||1 Tablespoon|
|Red wine vinegar||1 Tablespoon|
|Red wine||5 Tablespoon|
|Unsalted butter stick||1 , cut into 10 pieces|
|Chives||1 Bunch (100 gm)|
1. Place oysters on a hot grill or in an oven until they just begin to open. Open completely with a knife and remove the top shell.
2. While oysters are opening saute the shallots in 1 tablespoon butter for about 30 seconds. Add the vinegar and wine and reduce the liquid to a third. Remove from the fire and whisk cold butter into the remaining liquid one piece at a time until all is incorporated and mixture is creamy.
3. Add salt, pepper, and chives cut into 1/4-inch pieces and spoon over warm oysters.
