|Dry mustard||1 Tablespoon|
|Fresh bread crumbs||1 Cup (16 tbs)|
|Melted butter||2 Tablespoon|
|Egg||1 , beaten|
Mix mustard and a little water to a smooth paste in a small saucepan.
Add freshly opened oysters and cook for 2 minutes, stirring with a gentle hand.
Oysters should be thoroughly coated with the mustard.
Remove from stove and, when cool, dip them, one by one, in beaten egg, then coat with fresh bread crumbs.
Place in a buttered pan, sprinkle tops with melted butter, and broil quickly in a preheated broiler to brown both sides.
