Pork Risotto with Oyster Mushrooms

Nothing beats a great risotto. This oyster mushroom and pork risotto is a perfect quick and delicious evening meal. You'll need Arborio rice, onion and fresh garlic, chicken stock, parmesan cheese, a little white wine and butter, plus oyster mushrooms and pork strips.

Ingredients

Cooking liquid 3 Cup (48 tbs)
Arborio rice 1 Cup (16 tbs)
Onions 2 , chopped
Minced garlic 2 Teaspoon
Grated parmesan 1 Cup (16 tbs)
Butter 1 Teaspoon
White wine 1/4 Cup (4 tbs)
Olive oil 2 Tablespoon
Lemon wedges 2 , diced (Optional)
Sliced oyster mushrooms 1 Cup (16 tbs)
Pork strips 250 Gram

Directions

MAKING

1. In a pan heat oil, add pork and cook until borwned. add oyster mushroom and cook until soft, set aside. To the same pan, add more oil, fry the onions and garlic, add rice and stir.

2. Add stock, bring to a boil, cover and turn off the heat, until all stock is absorbed and rice is cooked. Return the pork strips and mushroon and stir through the butter, wine and cheese.

SERVING

3. Enjoy with your favourie beverage.
