Ingredients to make refried pinto beans     
1 medium peeled and roughly chopped onion
1 tsp. salt
1/2 cup lard or bacon drippings or canola oil for frying
1/4 tsp. dried oregano
2 cups dried pinto beans
1/4 lb. shredded Monterey Jack cheese
How to make refried pinto beans     
Step 1: Clean the pinto beans carefully by placing them on a plate and discarding any stones or bad beans.
Step 2: Put the beans in a strainer and wash thoroughly under cold water.
Step 3:  Pour 8 cups of water in a large pot with the beans and bring to a boil. Cream off any gray foam that surfaces as the beans boil.
Step 4: Next, lower the heat to medium Put the onion and simmer the beans for about 30 minutes.
Step 5: Add salt and oregano and keep on simmering for 1 1/2 hours more till the beans are very soft.
Step 6: Then heat one table spoon of lard bacon drippings or canola oil over medium-high heat in a large cast-iron skillet or heavy-bottomed pan. Always remember that lard or bacon drippings provide the best flavor for these beans, but canola oil will do in a pinch.
Step 7: Add a cup of the beans and their juice.
Step 8: Take a potato masher, mash the beans in the pan while they fry. Make sure that the beans have a fairly smooth consistency with small chunks of whole beans here and there.
Step 9: Set the beans in a large, heavy bowl and add a dash of salt and some of the cheese.
