Ingredients to make refried pinto beans
1 medium peeled and roughly chopped onion
1 tsp. salt
1/2 cup lard or bacon drippings or canola oil for frying
1/4 tsp. dried oregano
2 cups dried pinto beans
1/4 lb. shredded Monterey Jack cheese
How to make refried pinto beans
Step 1: Clean the pinto beans carefully by placing them on a plate and discarding any stones or bad beans.
Step 2: Put the beans in a strainer and wash thoroughly under cold water.
Step 3: Pour 8 cups of water in a large pot with the beans and bring to a boil. Cream off any gray foam that surfaces as the beans boil.
Step 4: Next, lower the heat to medium Put the onion and simmer the beans for about 30 minutes.
Step 5: Add salt and oregano and keep on simmering for 1 1/2 hours more till the beans are very soft.
