Fitness House Liverwurst
|Carrot||1 Medium, sliced|
|Onion||1 , sliced|
|Beef liver||1 Pound|
|Crushed peppercorns||1⁄4 Teaspoon|
|Garlic||1 Clove (5 gm)|
|Nutritional yeast||2 Tablespoon|
|Skim milk powder||1⁄2 Cup (8 tbs)|
|Unflavored gelatin||2 Tablespoon (Two Packets, 1 Tablespoon Each)|
|Cold water||1⁄2 Cup (8 tbs)|
|Beef stock||1⁄2 Cup (8 tbs) (Hot)|
Saute carrot and onion in oil until onion is transparent.
Lay beef liver on top of vegetables, add peppercorns, cover and steam 8 minutes.
Pass liver, garlic, and vegetables through meat grinder 2 or 3 times, using blades with smallest holes.
Stir into mixture, sage, basil, nutritional yeast, skim milk powder.
Soak gelatin in cold water for five minutes.
Then dissolve gelatin mixture in hot stock.
Combine this with liver mixture, put into well oiled loaf tin and chill overnight.
Turn out of pan and slice thin.
