Lemony Smash Potatoes

This is a great dish and it is unbelievably deeeeeeeeelicious! This is an Australian appetizer dish that I included in my new cookbook.
Ingredients
  New potatoes 12 Small
  Olive oil 2 Tablespoon, divided
  Fresh lemon juice 2 Tablespoon
  Sliced fresh parsley 1⁄2 Cup (8 tbs)
  Non fat sour cream 1 Cup (16 tbs)
  Chives 1 1⁄2 Tablespoon, finely chopped
  Sea salt and pepper To Taste
Directions

GETTING READY

  1. Boil potatoes in pan of water until tender and drain.
  2. Preheat oven to 450 degrees.

MAKING

  1. Grease a large baking sheet with 1/2 tablespoon olive oil and place the potatoes. Smash each potato with your hand until they slightly break open.
  2. Mix the remaining oil with the lemon juice. Drizzle mixture over the potatoes. Salt and pepper the potatoes. Bake for 25 minutes or until the potatoes are a bit crispy and golden.
  3. Meanwhile, mix the chives with the sour cream.
  4. Remove potatoes from the oven and sprinkle with the parsley.

SERVING

  1. Serve the potatoes with sour cream.
