|Cold water||2 Cup (32 tbs)|
|Thinly sliced orange||4 1⁄2 Cup (72 tbs)|
|Lemon||1 , thinly sliced|
|Sugar||3 Cup (48 tbs)|
|Vanilla extract||1 Teaspoon|
|Pecans/Walnuts||1⁄2 Cup (8 tbs), chopped|
|Maraschino cherries||1⁄4 Cup (4 tbs)|
Pour cold water over oranges and lemon in a bowl.
Let stand, covered, 8 hours or overnight.
Turn into a large kettle and cook gently, uncovered, 1 1/2 hours, or until peel is tender.
Measure the mixture into a saucepan.
(There should be about 3 cups.) Stir in 3 cups sugar (or use equal parts sugar and fruit).
Cook gently until thickened, 1 to 1 1/2 hours.
Add extract, nuts, and cherries several minutes before cooking time is ended.
Ladle into hot sterilized jars and seal
