Carrot-Mandarin Orange Casserole

Ingredients
  Sweet potatoes 6 , peeled and diced
  Diced carrots 4 Cup (64 tbs)
  Pitted prunes 1⁄2 Cup (8 tbs)
  Orange juice 1 Cup (16 tbs)
  Brown sugar 1⁄4 Cup (4 tbs), firmly packed
  Cinnamon 1⁄2 Teaspoon
  Juice-packed canned pineapple chunks 2 1⁄2 Cup (40 tbs)
  Mandarin orange slices 1 Cup (16 tbs), drained
Directions

1. Preheat oven to 350 degrees.
2. Bring water to a boil in a large pot. Add sweet potatoes and carrots. Simmer for 15 minutes or until tender.
3. Drain and mash. Stir in prunes. Place in a large nonstick casserole or a casserole sprayed with vegetable cooking spray.
4. Combine orange juice, brown sugar, cinnamon, pineapple, and mandarin orange slices.
5.Pour juice and fruit mixture over sweet potatoes and prunes. Bake, covered, for 45 minutes.
