|Sifted flour||1 1⁄4 Cup (20 tbs), sifted|
|Baking powder||1 Teaspoon (Calumet)|
|Grated orange rind||1 1⁄2 Teaspoon|
|Butter/Shortening||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Orange juice/1.25 cups post toasties / grape-nuts flakes||1 Tablespoon|
Sift flour once, measure,, add baking powder and salt, and sift again.
Add orange rind to shorteningr and cream thoroughly.
Add sugar gradually and cream together until light and fluffy.
Add egg and beat thoroughly.
Then blend in milk and orange juice.
Add flour mixture gradually, blending; well.
Stir in cereal.
Chill until firm enough to roll.
Roll 1/8 inch thick on lightly floured board.
Cut with floured 2 1/2-inch cutter.
Bake on greased baking sheet in hot oven (425Â°F.) 6 to 8 minutes.
Makes 3 to 4 dozen cookies.
Note: If desired, 1/2 cup dark corn syrup may be substituted for 1/2 cup of the sugar.
Increase flour to 1/2 cups and omit milk and orange juice.
