Pumpkin With Ginger & Orange
|Pumpkin||500 Gram (1 Pound)|
|Sunflower oil||2 Tablespoon|
|Grated ginger root||1 Teaspoon|
|Wine vinegar||2 Tablespoon|
|Brown sugar||1 Tablespoon|
|Orange juice||3 Tablespoon|
|Grated orange rind||1 Teaspoon|
|Chopped parsley||1 Tablespoon (For Garnish)|
1 Peel the pumpkin, discard the seeds and slice thinly. Heat the oil in a large pan, add the pumpkin and fry on both sides until golden. Add the ginger and stir well.
2 Add the remaining ingredients and simmer gently for about 10 minutes, stirring occasionally, until the pumpkin is tender. Serve hot, garnished with parsley.
