Orange Sabayon

Ingredients
  Granulated sugar 1⁄2 Cup (8 tbs)
  Egg yolks 3 (3)
  Orange rind 1⁄4 Teaspoon, grated
  Orange juice 1⁄2 Cup (8 tbs)
Directions

In heavy saucepan over low heat or in top of double boiler over barely simmering water, beat sugar, yolks and orange rind with electric mixer until sugar has dissolved and mixture is creamy, about 3 minutes.
Gradually pour in orange juice, beating constantly.
Continue beating until mixture thickens, becomes fluffy and doubles in volume, about 8 minutes.
Makes about 3 cups (750 mL) sauce, enough.
