Orange Baskets

Ingredients
  Carrots 1 Pound
  Dessert apples 2 Small
  Lemon juice 1 Tablespoon (Extracted From 1 Fruit)
  Raisins 1⁄3 Cup (5.33 tbs)
  Oranges 4
  Celery stalks 4
  Sugar 2 Tablespoon
  Chopped pistachio nuts 1⁄4 Cup (4 tbs) (As Garnish)
Directions

GETTING READY
1. Peel and finely grate carrots
2. Peel, core and slice apples thinly; drizzle lemon juice on top tp avoid discolouration

MAKING
3. In a bowl, add raisings, cover with boiling water and drain completely
4. Halve two of the oranges, scoop th flesh out, discard the seeds and pith and chop the flesh finely
5. Peel the other two oranges, chop the flesh and dicard the seeds and pith
6. In a bowl, mix together apples, raisings, orange flesh, grated or chopped celery, carrots and sugar; leave for twenty minutes and fill into the orange halves

SERVING
7. Sprinkle pistachios on top and serve
