Classic Kora No Murrabo

Ingredients
  Ash gourd 1 Kilogram
  Oranges 2 (Use The Peel)
  Limes 5 , juiced
  Lime 1 (Use The Rind)
  Sugar 750 Gram
  Cardamoms 8 , peeled crushed
  Chemical lime 50 Gram
  Salt 1 Teaspoon
Directions

Peel and discard soft part of gourd.
Slice into one-and-a-half-inch slices.
Remove pith from orange peel and slice thinly as for marmalade.
Blanch and dry.
Soak chemical lime in enough water to cover gourd.
Allow lime to settle and strain.
Soak gourd in strained water for 1-2 hours.
Dissolve sugar in one cup water and bring to boil.
Add rind and juice of one lime, boil and strain.
Squeeze out water from gourd and add to syrup.
Cook rapidly till most of the liquid is absorbed.
Lower heat, add orange peel, remaining lime juice and salt.
Continue cooking till syrup is thick.
Add cardamoms, cool completely and bottle.
This preserve should set like a thick jam.
