Roasted Salmon with Orange and Soy
|Orange juice||1⁄4 Cup (4 tbs)|
|Reduced sodium soy sauce||1⁄4 Cup (4 tbs)|
|Chopped fresh parsley||2 Tablespoon|
|Garlic||2 Clove (10 gm), minced|
|Dried oregano||1⁄4 Teaspoon, crushed|
|Freshly ground black pepper||1⁄4 Teaspoon|
|Salmon fillets||24 Ounce, skinned (4 fillets, 6 ounces each, preferably thick, center-cut pieces)|
In a zip-top plastic bag, combine the orange juice, soy sauce, parsley, garlic, oregano, and pepper.
Add the salmon, seal the bag, and turn to coat evenly.
Marinate in the refrigerator for 1 hour.
Preheat the oven to 450°F.
Remove the salmon from the marinade and place in an 11" X 8" baking dish.
Spoon about 1 tablespoon of the marinade over each piece of salmon.
Discard the remaining marinade.
