Lemon Broiled Orange Roughy
|Orange roughy fillets||16 Ounce|
|Vegetable cooking spray||1|
|Lemon juice||3 Tablespoon|
|Dijon mustard||1 Tablespoon|
|Reduced calorie margarine||1 Tablespoon, melted|
|Ground pepper||1⁄4 Teaspoon|
|Ground pepper||To Taste|
Place fillets on rack of a broiler pan coated with cooking spray.
Combine lemon juice and next 3 ingredients; stir well.
Brush half of lemon juice mixture over fillets.
Broil fillets 5 1/2 inches from heat 8 to 10 minutes or until fish flakes easily when tested with a fork.
Drizzle remaining lemon juice mixture over fillets; transfer to a serving platter.
If desired, sprinkle with ground pepper, and garnish with lemon slices.
