Orange Pasta Arancia
|All purpose flour||3 Cup (48 tbs)|
|Eggs||3 , beaten lightly (At Room Temperature)|
|Olive oil||1 Tablespoon|
|Minced orange zest||2 Tablespoon|
|Strained orange juice||4 Tablespoon|
1. Use a large bowl with a wide opening. Add the flour and make a well in the center. Add the eggs, olive oil, and orange zest. Add orange juice 1 tablespoon at a time, then add salt. Using your hands or 2 wooden spoons, work the dough together gathering all the flour from the sides of the bowl. Add more orange juice and keep working until it forms a ball.
2. Turn the dough out onto a lightly floured board and start kneading. If you need more flour, use it. Knead for about 10 minutes, then cover the dough with a bowl or cloth and let it rest for 30 minutes.
