Sprinkle gelatin over orange juice; allow to rest 5 minutes to soften.
Cook and stir over medium heat until gelatin is dissolved.
Stir in sugar replacement and orange rind.
Bring to a boil, boil for 2 minutes and remove from heat.
Stir in vanilla; stir in walnuts until completely coated, Allow walnuts to rest in juice 10 minutes.
Remove with slotted spoon and cool completely.
