Beans Chow Chow
|String beans||2 Liter, cut in pieces (1/4 Peck)|
|Cauliflower head||1 (In Flowerets)|
|Shelled lima beans||3 Cup (48 tbs)|
|Corn kernels||3 Cup (48 tbs)|
|Onions||1 Quart, chopped|
|Green peppers||5 , chopped|
|Green tomatoes||2 Liter, chopped (1/4 Peck)|
|Cider vinegar||3 Quart|
|Sugar||2 Milliliter (2 Clips)|
|Salt||1⁄2 Cup (8 tbs)|
|Ground mustard||1⁄2 Pound|
|Mustard seed||2 Tablespoon|
|Celery seed||2 Tablespoon|
Prepare string beans, cauliflower, lima beans, and corn and cook together about 25 minutes.
Add chopped vegetables.
Heat vinegar, add combined spices and water, from cooked vegetables.
Add vegetables to vinegar and cook 25 minutes, stirring constantly.
Pour into hot sterilized jars and seal immediately.
