Purple Onion & Sweet Red Peppers

|Purple onion||1 Medium|
|Garlic||1 Tablespoon, finley minced|
|Black pepper||1 Tablespoon|
|Lemon juice||1 Tablespoon|
|Cooking spray||1 Tablespoon|
Clean the peppers and remove the seeds and inner fibers.
Slice into rings 1/4 inch thick.
Remove the outer skin from the onion and slice into rings 1/4 inch thick.
In a medium bowl, toss the vegetables with the garlic, pepper and lemon juice.
Coat the grill with cooking spray and preheat for 5 minutes.
Layer the peppers and onion in the grill and cook for 6-8 minutes.
Vegetables will be tender-crisp when done.
Serve immediately on a warmed platter.
