Beef & Thyme Stuffed Onions

Ingredients
  Spanish onions 6 Large, peeled
  Salted water 2 Cup (32 tbs) (adjust quantity as needed)
  Lean ground beef 1⁄2 Pound
  Thyme 1⁄2 Teaspoon
  Tomato paste 1⁄4 Cup (4 tbs)
  Egg yolk 1 , beaten
  Salt To Taste
  Freshly ground pepper To Taste
  Oil 1 Tablespoon
  Meat sauce 1 Cup (16 tbs) (as per choice)
  Rosemary sprig 3 (for garnish)
Directions

Put onions into boiling, salted water until covered; simmer for 30 minutes or until tender.
Remove with slotted spoon; let drain and cool.
Hollow out onions, being'careful to leave shells intact.
Put aside; Chop onion centers.
Saute ground beef Until just browned.
Remove from pan with slotted spoon; put into mixing bowl.
Add chopped onion, thyme, tomato paste, egg yolk, salt, and pepper; mix well.
Spoon beef mixture into onion shells; place in baking dish.
Brush onions lightly with oil; cover with aluminum foil.
Bake in preheated 350°F toaster oven 10 to 12 minutes or until heated through.
Heat meat sauce; pour into serving dish.
Place onions in sauce.
Garnish with .sprigs of rosemary.
