Summer Squash And Onions
|Summer squash||3 Cup (48 tbs), diced|
|Onion rings||2 Cup (32 tbs)|
|Tomato juice||1⁄2 Cup (8 tbs)|
Prepare vegetables as directed; put them into pressure cooker.
Add salt and pepper; stir gently to mix.
Pour tomato juice over.
Close cover of cooker; put pressure regulator in place.
When pressure is reached and regulator rocking gently, cook for 3 minutes.
Cool at once under running water.
Put vegetables into serving bowl; serve at once.
