Marinated Tomatoes And Onions

|Tomatoes||6 Large, peeled|
|Parsley||1 Tablespoon, chopped|
|Olive oil||3⁄4 Cup (12 tbs)|
|Wine vinegar||1⁄4 Cup (4 tbs)|
Thinly slice tomatoes and onions; arrange layers in serving bowl.
Sprinkle each layer with parsley.
Blend olive oil, vinegar, salt and pepper; pour over layers.
Chill for at least 4 hours before serving.
May be garnished with stuffed olive slices.
