Herbed Salmon With Marinated Onions
|Salmon steaks||1 Pound|
|Olive oil||1⁄4 Cup (4 tbs)|
|Red wine vinegar||1⁄4 Cup (4 tbs)|
|Balsamic vinegar||1 Tablespoon|
|Red onion||1 Large|
|Dried rosemary||1⁄2 Teaspoon|
|Thyme/1/2 teaspoon dried thyme, crushed||4 Small|
|Olive oil/Cooking oil||1 Tablespoon|
Thaw fish, if frozen.
For marinade, combine the 1/4 cup olive oil, red wine vinegar, balsamic vinegar, and dash pepper, place onion slices in a plastic bag set into a shallow dish.
Pour marinade over onion slices.
Marinate 2 to 24 hours, turning bag occasionally to distribute marinade.
Brush salmon steaks with the 1 tablespoon olive oil; sprinkle with salt and dash pepper.
Place 1 sprig each of rosemary and thyme on top of each salmon steak.
Cover and refrigerate salmon till ready to grill.
Lightly grease cooking grill.
Place fish on the cooking grill.
Grill 10 to 12 minutes or till fish flakes when tested with a fork, turning once halfway through grilling time.
Remove onions from marinade with a slotted spoon; serve with salmon.
