Smothered Onions

Ingredients
  White onions 1 Kilogram
  Vegetable oil 60 Milliliter
  Bacon drippings 60 Milliliter
  Celery salt 1 Milliliter
  Fresh parsley 60 Milliliter
  Salt To Taste
  Pepper To Taste
Directions

Clean and remove skins from the small onions.
This is quickly done if you cover them with boiling water, let them stand 5 minutes, drain and peel, cutting first the top and very little of the bottom so the onions do not break when cooking.
Place the cleaned onions in a 4-cup (1 L) microwave-safe dish.
Pour the oil and the bacon drippings on top.
Cover and microwave at HIGH 6 to 8 minutes, stirring twice.
It is important that the onions remain a little crunchy.
Add the remaining ingredients, toss until well blended.
Serve hot or tepid.
