Slice the onions and potatoes very thinly, and dice the green bacon (or ordinary mild streaky bacon).
Grease with lard the sort of saucepan you don't mind carrying to table, if you haven't got a tin lined copper or cast-iron dish.
Put into it layers alternately of potato, bacon and onion.
Sprinkle each layer with pepper.
Cover, and let it simmer over a very gentle heat for 1 1/2 hours.
Alternatively do the potatoes in exactly the same manner in the oven.
