Crispy Fried Onion Rings

Ingredients
  Spanish onions 2 Large
  All purpose flour 1 Cup (16 tbs)
  Sugar 1 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Ground nutmeg 1⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Buttermilk 1 Cup (16 tbs)
  Egg 1
  Vegetable oil 1 Cup (16 tbs)
Directions

Peel onions; cut into 1/2-inch slices, and separate into rings.
Place rings in a bowl, and cover with water; refrigerate 1 hour.
Drain; dry with paper towels.
Combine dry ingredients; add buttermilk and egg, beating until smooth.
Dip rings into batter; fry in deep hot oil (375°) 2 to 3 minutes until golden brown on both sides.
Drain well on paper towels.
