Spaghetti With Onion Anchovy Sauce

Ingredients
  Olive oil 1 Teaspoon
  Canola oil 1 Teaspoon
  Thinly sliced red onion 3 Cup (48 tbs)
  Anchovy fillets 4 , well drained and patted dry
  Spaghetti 6 Ounce, cooked, drained, reserve 2 tablespoons cooking water
  Grated parmesan cheese 2 Tablespoon
  Chopped fresh flat leaf parsley 1 Tablespoon
  Ground black pepper To Taste
Directions

1 . In medium saucepan, combine oil, onions and 2 tablespoons water. Cover and cook over very low heat, stirring occasionally, 1 hour, until onions are very soft.
2. With wooden spoon, mash anchovies into onions; cook 30 seconds. Stir in pasta, Parmesan cheese, parsley and reserved pasta cooking water. Transfer to large serving bowl; season with pepper to taste.
