Spaghetti With Onion Anchovy Sauce
|Olive oil||1 Teaspoon|
|Canola oil||1 Teaspoon|
|Thinly sliced red onion||3 Cup (48 tbs)|
|Anchovy fillets||4 , well drained and patted dry|
|Spaghetti||6 Ounce, cooked, drained, reserve 2 tablespoons cooking water|
|Grated parmesan cheese||2 Tablespoon|
|Chopped fresh flat leaf parsley||1 Tablespoon|
|Ground black pepper||To Taste|
1 . In medium saucepan, combine oil, onions and 2 tablespoons water. Cover and cook over very low heat, stirring occasionally, 1 hour, until onions are very soft.
2. With wooden spoon, mash anchovies into onions; cook 30 seconds. Stir in pasta, Parmesan cheese, parsley and reserved pasta cooking water. Transfer to large serving bowl; season with pepper to taste.
