Baked Stuffed Onions with Cheese
|Onions||2 Pound, peeled|
|Parmesan cheese||2 Tablespoon, grated|
|Croutons||1 Cup (16 tbs), crushed|
1. With sharp knife, scoop out center of each onion, leaving a shell; chop center portions finely—should measure about 1 cup.
2. In hot butter, saute chopped onion, stirring until golden - about 3 minutes. Remove from heat; add salt, pepper, cheese and croutons; mix well. Use to stuff center of each onion, mounding high.
3. Place onions in center of 24-by-18-inch piece of heavy-duty foil. Seal foil at top and sides. Place in 9-inch square baking pan. Bake 1 1/2 hours, along with roast.
